Welcome to DILL Restaurant, a Nordic restaurant recently relocated to downtown Reykjavík! DILL Restaurant is the mindful creation of Chef Gunnar Karl Gíslason and Sommelier Ólafur Örn Ólafsson, pioneers of the New Nordic Kitchen in Iceland.
Dill is much more than a restaurant. It is the result of a dream Gunnar Karl and Ólafur have shared for quite a while about their own small restaurant with a great personality.
A restaurant where guests not only eat well, but where the meal becomes an experience in itself and classic Nordic ingredients are prepared in a modern way using contemporary kitchen gadgets.

At Dill Restaurant, the atmosphere is different depending whether you enjoy lunch or dinner.
During lunchtime, the atmosphere is informal and the menu simple, short and new every day. You will find traditional Nordic and Icelandic dishes on this menu which have been modernized
Dishes like “bixe mad”, meatballs, lamb shanks and “plokkfiskur” are dressed in new clothes and served in nice clay pots on the table along with a nice soup, salad and dessert.
For dinner, they put on their best clothes to present the New Nordic Kitchen at its best. Every week a new seven-course menu with wine selected to match each course is arranged.
The objective of Gunnar Karl and Ólafur is always to offer their guests a unique experience every time, both in terms of originality and quality - " at DILL Restaurant we are rediscovering our Nordic culinary roots and ingredients, seasoning them with modern technology and unlimited creativity. This is a newly opened restaurant and whilst they are putting together an impressive cellar, the wine list changes often. Much attention and ambition is put into matching the wine to the food menu, and they also offer a wide range of wines available by the glass.
